Favorite Ingredients Friday: Peanut Banana Muffins

This isn’t usually the type of recipe I like, but I tried baking it as a treat for the kids at school back in my preschool teacher days. They’re actually really tasty!! It’s got a peanuty taste that’s not too peanuty, and they’re pretty hearty. And they were a big hit with the kids! And pretty popular with husbands too. :D

Peanut Banana Muffins

1 1/2 C. All-Purpose Flour
1/2 C. Sugar
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 Egg
1/2 C. Butter or Margarine
1 1/2 C. Ripe Bananas, mashed (about 3 medium bananas)
3/4 C. Peanut Butter Chips

Preheat oven to 375.

In a bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the egg, butter, and bananas. Stir into dry ingredients just until moistened. Fold in chips. Fill greased or paper-lined muffin cups three-fourth full. Bake at 375 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack.

Yield: 1 dozen (but I like these as mini-muffins the best...!!)
